Crunchy Pepper Jack Cabbage Casserole


This is so good!  I made this tonight and my husband, who normally doesn't care for cabbage dishes, ate it up.  It's easy to make too.

2 cups of coarsely cut cabbage
Salt to taste
1 cup shredded Pepper Jack cheese
1 cup light cream or half and half
20 Ritz Crackers, crushed
3 Tbls butter

Preheat the oven to 350 degrees.

Combine the cabbage with the cheese and cream or half and half.  Stir in the salt and pour into a greased 1 1/2 quart casserole dish.  Sprinkle with the crackers and dot with butter.  Bake for 35 minutes or until golden.

Serves 4
