3 to 4 pints of steamed white rice.  You can get these
to go at any Asian restaurant.
1/3 cup of chicken broth (You can freeze the remaining broth in a zip lock bag)
Soy Sauce to taste

1.  Fry up the bacon pieces in a Wok pan or large non-stick frying pan.
While the bacon is frying, scramble the eggs with a teaspoon of oil
     in a seperate frying pan.

2.  When the bacon is crisp, toss in the onions through the mini ears of corn.
Stir-fry the bacon and veggies for 4 minutes.

3.  Add the rice, breaking it up and stirring thourghly.  Add the chicken broth
and a desired amount of soy sauce.  Stir-fry for another 4 minutes
or until the rice is hot.  Add the scrambled eggs and stir the rice mixture well.

Just Like Grandma Evie Used to Make

Thank you for choosing Evie Rudolf's cookbook!  It is free at the four links below.

In 2013 I had the honor of helping my mother-in-law, Evelyn Rudolf, create a cookbook.  Over the years Evie's friends and family had asked her to put together a cookbook so she could share her wonderful recipes.  So she and I decided to do just that.  We both enjoyed gathering her favorites and making her dream of having her own cookbook a reality.  Evie and I hope you will enjoy her recipes and the helpful hints in her cookbook.  You can save and or print off Evie's cookbook when you follow the four links below.

Update 9-28-15.  For those of you who already have Evie's cookbook, there are a few corrections you can add to your cookbook.  With the exception of the Cucumbers for Freezer recipe, the rest were corrected already in the pages below.  So if you view or copy them, you will see where the corrections were made.  Below are all of the corrections made since the first printing.

Page 3 ~ Cream Puffs.  Add 1/2 cup of butter to the boiling water.

Page 12 ~ Yellow Angel Food Cake.  Add 1 1/2 cups of sugar to the list of ingredients.

Page 27 ~ Maple Sticks.  The flour should read 4 to 5 cups instead of the 8 cups.

Page 53 ~ Cucumbers for Freezer.  The 1/2 cup white sugar should be changed from white sugar to vinegar.

Page 64 ~ Evie's Meatloaf.  It should read 3/4 cup of ketchup.

We apologize for the inconvenience.  Thank you!

Here are a few more tips in the kitchen from Evie.

1.  Add a tablespoon of lemon juice to Jello if you plan to use bananas.  This keeps them from turning dark.

2.  To make a boxed cake even better, add 1/4 cup of butter; softened, 1/2 cup of flour and 1 teaspoon of baking powder.  It really does make a superior cake.

3.  When a recipe calls for greasing a pan, use the inside of the butter or margarine wrapper to grease the pan.  This idea Evie shared with me not too long ago.  It works wonderfully.

Quick Shrimp Scampi

½ stick (1/4 cup) of margarine

1 cup of fat-free Italian salad dressing
1/2 teaspoon of Garlic Powder
Juice of 2 lemons or 3 tablespoons of lemon juice
Cracked pepper to taste
2 pounds of uncooked shrimp, cleaned

Melt butter in a 9 x 13 pan lined with foil.  Stir in the dressing, lemon juice, garlic powder and pepper.
Add the shrimp, stirring to coat with the sauce.  Bake at 325 degrees for 20 to 25 minutes or until the shrimp is done.  Stir occasionally.  Do not over cook.  Serve with steamed rice.  Try to get fresh shrimp.  If using frozen, thaw completely, drain well and pat dry before cooking.

Diana's Tuna Ranch Casserole

Tuna Ranch Casserole

8 ounces of cooked and drained Pennini Rigati
1 large plus 1 small can of tuna in water, well drained
1 1/2 cups of favorite ranch dressing
3/4 cup of milk
1/2 tsp seasoned salt
1/2 tsp onion powder

Topping:
1/2 cup of seasoned bread crumbs
1/2 cup of grated Parmesan Cheese
4 Tbls of melted butter
Paprika
Directions:

Preheat oven to 350 degrees.
Place the cooked Rigati in a 2 quart casserole.
Stir in the tuna, ranch dressing, milk, seasoned salt and onion powder.
In a small bowl, combine the bread crumbs and cheese. Stir in the melted butter and sprinkle over the top of the casserole. Sprinkle with paprika.
Bake for 30 to 35 minutes or until bubbly.

Quick and Easy Popcorn Balls

Quick and Easy Light Popcorn Balls

3  Three ounce bags of light or butter flavored microwave popcorn (make sure you get popcorn with no diacetyl added)

1 stick of margarine (1/2 cup).  Do not use butter or your marshmallow sauce will be too runny.
1/2 tsp vanilla
1  (16) ounce bag of mini marshmallows

Cooking Spray or margarine

Pop the popcorn in the microwave according to instructions on the bag.  Let cool.  Shake the bag so all the unpopped kernels go to the bottom of the bag.  Place in your largest bowl.  Gently pour the popped popcorn into the bowl, being careful not to let any unpopped kernels get through.

Melt the butter in a large sauce pan over medium high heat.  Stir in the marshmallows.  Reduce heat to low and cook for 7 minutes, or until the marshmallows have completely melted.  Stir frequently.  Remove from heat when creamy and add the vanilla and desired food color.

Pour the melted marshmallow mixture over the popcorn and stir to coat the popcorn well.  Lightly spray your hands with the cooking spray and take a handful of the popcorn mixture and press into a small ball.  You can use margarine on your hands instead.  Place on a clean surface and repeat above with remaining popcorn mixture.  Wrap each popcorn ball in a small section of plastic wrap.

Enjoy!

For the holidays, I use a small amount of food color to match.  Orange for Halloween, red or green for Christmas, etc.
You can also add candy corn for Halloween or cinnamon red hearts for Valentine's Day.  They're fun to make and the kids love them.

Mom's Glazed Drumsticks (Oven and Air Fryer Methods)

Glazed Drumsticks

2 packages of chicken drumsticks, about 10 to 12 in each package
1 1/2 Tbs cornstarch
1 tsp salt
1/8 tsp pepper
1/2 cup sugar
1 tsp ginger
1/3 cup lemon juice
1/4 cup soy sauce
3/4 cup of water

Preheat oven to 425 degrees.  Place drumsticks in a single layer on a baking sheet.
Bake, turning once, for 30 minutes.  Mix the remaining ingredients into a
saucepan.  Cook, stirring constantly until mixture thickens and boils.  About 3 minutes.
Brush part of the sauce over the drumsticks.  Continue baking the chicken, turning and
brushing several times with the sauce until the chicken is done and richly glazed.  If you
like more glaze on your chicken, double the sauce recipe.   Enjoy!

Here’s the Air Fryer version.

2 packages of chicken drumsticks, about 10 to 12 in each package.  Or you can use chicken wings.  Thawed.
1 1/2 Tbs cornstarch
1 tsp salt
1/8 tsp pepper
1/2 cup sugar
1 tsp ginger
1/3 cup lemon juice
1/4 cup soy sauce
1/2 cup of water

Combine all of the ingredients, except for the cornstarch.  Marinate the chicken all afternoon in a zip lock bag, refrigerated.

Preheat air fryer to 400 degrees.  Place drumsticks in a single layer on a baking sheet, grill style shelf or tray.

Pour the marinade into a bowl and add the cornstarch.  Bake 1 to 2 minutes on high in microwave or until sauce has thickened.  Baste each drumstick or wing with some sauce.  Cook 5 minutes and then turn.  Baste the other sides.  Cook 5 minutes more.  Turn and baste every 5 minutes until the 30 minutes is done.  Continue basting and turning to desired doneness. You may need to go 35 minutes for crispier skin.  Serve with 1/2 cup of ranch dressing whisked with 1/2 to 1 Tbs of wasabi powder.

Favorite Taco Salad

Favorite Taco Salad

I got this recipe from a church member at a potluck dinner.  It makes a lot of salad and is great for any gathering.  Enjoy!

1 pound of ground beef
1 package of taco seasoning (not hot)
1  14 ounce can of red kidney beans, drained and rinsed
One large head of iceberg lettuce or 2 small, washed and dried well
(A salad spinner works great here)
5 Roma tomatoes , chopped fine
1 cup of finely chopped red onion
3 cups of shredded sharp cheddar cheese
1  16 ounce bottle of Thousand Island Dressing
1 large bag of Nacho Cheese Flavor Doritos, crushed.  It's easy to just
open the bag and lay it flat on the counter and crush with your palms.

Brown the ground beef in a large frying pan.  Add the taco seasoning with 3/4 cup of water, stir well, add the kidney beans and simmer for 5 minutes.  Remove from heat and let totally cool to room temperature.  Meat mixture should not be warm at all.

Tear the lettuce into a very large bowl.  Add the tomatoes and onion.
Stir in the completely cooled meat mixture.  Next, stir in all of the Thousand Island dressing and mix well.  Add the cheese and Doritos; mixing well.
Serve with favorite salsa or all on its own.

Honey Rye Bread in Your Bread Machine

This was a great way to use your left over egg yolks.  The bread is so tasty and moist.  To quote Lucy Ricardo, "it's a happy little loaf!"  As you can see, the bread came out tall in the machine. Yours may not.  Hope you enjoy it!

Honey Rye Bread in Your Bread Machine

Add to your bread maker in the order given.

1 cup of warm water

1/8 of a cup of warm milk

1/3 cup of honey

1 1/2 tsp sea salt

3 egg yolks at room temperature

2 cups of bread machine flour

1 cup rye flour

2 tsp yeast

I used the Basic setting on my machine.  Set your crust to light or medium.  I set mine to dark and found it was done before the cycle.  Next time I'll use the light setting.  You can brush melted butter over the top if you desire.  I hope it works out for you!  Let me know in the comments below how yours came out.  Also, I would love to know if you improved or changed the recipe.  Thanks!

Hawaiian Loco Moco

Hawaiian Loco Moco

Actually, it's my version of Loco Moco.  I made my mom's Salisbury Steak with the rice and egg.  Yum!  We really enjoyed this dish in Hawaii at Happy's Snack Bar at the Hale Koa.  Here is my version of Loco Moco.  Enjoy!

For this recipe you will need 4 cups of steamed white rice and 4 fried eggs.

1 large onion, divided and diced very fine
1 lb ground beef
1/2 cup of soft bread crumbs
3/4 tsp of nutmeg
Sliced fresh mushrooms
2 Tbls butter
3 tsp cornstarch dissolved in 2 cups of water
2 tsp of beef bullion

Mix the beef with the onion, bread crumbs and nutmeg.  Shape into 4 patties.  Saute' in a deep frying pan for 4 minutes or until done.  Remove patties and keep warm.  Discard any fat.  In the same pan, melt the butter and saute' the remaining onion with the mushrooms until tender.  Add the cornstarch and water mixture along with the beef bullion.  Cook and stir until thickened.  In a large bowl, spoon in 1 cup of the steamed white rice. Top with 1 pattie and about 1/2 cup of gravy and mushrooms.  Top with a fried egg.  Pepper to taste.  I get the rice going first and keep the patties with gravy warm until the eggs are fried.

Larry's Easter Glazed Marmalade Ham Dinner with Harvest Cheddar Potatoes

Larry's Glazed Marmalade Ham

10 pound pre cooked spiral ham with the honey and spice seasoning packet or any seasoning packet
1 1/2 cups of Marmalade

Cover and cook the ham according to directions on packaging.  Just before the last half hour of cooking time, heat the contents of the maple packet in a medium saucepan over medium heat according to packaging. Do not overcook.  Pour the glaze over the ham and then spread the marmalade over the top of the glaze.  Bake for the last half hour, uncovered.  Let set for 5 minutes before serving.

Harvest Cheddar Potatoes

6 to 8 Potatoes cooked, peeled and chopped into bite size pieces

1 cup chopped green onion (optional)
2 cans of cream of chicken soup

1/2 cup of butter (1 stick)
1 1/2 cups shredded cheddar cheese
2 cups of sour cream (16 oz. carton)
2 cups of crushed Harvest Cheddar Sun Chips or cornflakes

Pre heat oven to 350 degrees.  Place potatoes and green onion in a 9 x 13 pan.
In a large saucepan add the soup, butter and cheese.  Heat to medium and stir until butter and cheese are melted and smooth.  Remove from heat and add the sour cream.  Stir mixture well.  Pour over the potatoes and onions and cover with a layer of the crushed chips.  Bake for 45 minutes until bubbly. This is double the recipe.  It makes quite a bit for a large group. If you're like our house and have some family members who aren't thrilled with the look of chopped onion in their dish, you can substitute 1/2 to 1 tsp of onion powder to the creamy cheese sauce. Add it in with the sauce ingredients.
